1/2 C raw local organic honey
1/4-1/2 C carob powder
2 C raw walnuts
Optional: add 1 T tahini (to cut sweetness)
Add carob powder to honey (& tahini) and stir until thoroughly mix. It should look like melted chocolate but smell even more amazing! Add walnuts and mix coating all areas. Use a spoon or ice cream scooper to help form a ball shape. Scoop carob turtles (right into your mouth) or onto a tray or dish and place in fridge or freezer for 30 min to an hour. The longer it has to harden the chewier it will be. In Alissa’s book these turtles are dehydrated overnight but we like the simplicity of just placing and storing the turtles in the fridge or freezer and they are just equally if not more delicious.
